Ingredients
🍤 1 lb shrimp, peeled and deveined
🍝 10 lasagna noodles, cooked
🥬 1 cup spinach, chopped
🧀 1 cup ricotta cheese
🧄 3 cloves garlic, minced
🧂 1 tsp salt
🌿 1 tsp Italian seasoning
🧀 1 cup shredded mozzarella cheese
🧀 1/2 cup shredded cheddar cheese
🥄 1 tbsp olive oil
🧈 2 tbsp butter
🥛 1 cup heavy cream
🧀 1/2 cup grated Parmesan cheese
🌶️ 1/2 tsp paprika
Instructions
1- Prepare the Filling:
- Heat olive oil in a pan over medium heat.
- Add garlic and spinach, cooking until wilted.
- Stir in ricotta cheese, salt, and Italian seasoning.
2- Cook the Shrimp:
- In the same pan, melt butter.
- Add shrimp and paprika, cooking until shrimp is pink and opaque.
- Remove shrimp from heat and set aside.
3- Assemble the Lasagna Rolls:
- Lay cooked lasagna noodles flat on a clean surface.
- Spread ricotta-spinach mixture evenly over each noodle.
- Place cooked shrimp on top and carefully roll up each noodle.
4- Prepare the Sauce:
- In a saucepan, heat heavy cream over medium heat.
- Stir in Parmesan cheese and whisk until smooth.
- Pour sauce over the lasagna rolls in a baking dish.
5- Bake the Dish:
- Sprinkle shredded mozzarella and cheddar cheese over the top.
- Bake at 375°F (190°C) for 20 minutes, until bubbly and golden.
