The Sandwich who opened itself because of deliciousness

Breakfast is often neglected by myself... though on weekends that changes. Like today, and i felt like making one of those sandwiches. (Finally again)

It went all as planned - spring onions, mushrooms, with fried eggs sunny side up in butter on some home made toasted "Lizzie"-bread.

All went good... started toasting the bread, sautée the spring onions with the mushrooms in some butter. Added the eggs, drunk some coffee while slowly waiting for the perfect moment to put all of that delight onto the bread.

The final moment arrived and everything looked sooooooo yummy, that i just couldn't wait to eat ~~breakfast~~ brunch - actually...

And there was it when the sandwich became an open sandwich, eaten directly out of the pan. 😋

Lucky me, everything on or in bread is a sandwich anyways... remember, i even consider Pizza as an open sandwich. Hehe!

So here you have my BrunchOpenWich from today. It made me already think of another sandwich, but that's for another time...
