Whenever my wife and I are home, my wife usually picks a few fresh vegetables from the home garden to cook for each meal. This post features another family meal made by my wife, using a few fresh vegetables from our home garden. For this meal, we have red curry with chicken and mixed vegetables, And also stir-fried water spinach with fermented soybean paste. What ingredients from the garden are used for red curry with chicken and mixed vegetables? Let's go see it first.

Kaffir lime leaves
Basil
Ingredients for red curry with chicken and mixed vegetables.

shallots
garlic
dried chilies
shrimp paste
coconut milk
water
pork flavour seasoning powder
sugar
How to cook red curry with chicken and mixed vegetables : Crush the shallots, garlic, dried chilies with shrimp paste using a pestle and mortar to make red curry paste.
Put a pot on the stove and add red curry paste to the pot, then stir-fried red curry paste until cooked and fragrant.
Then add the chicken to the pot and stir-fry chicken with red curry paste until cooked.
Then add water in the pot, bring the water to a boil, then add the coconut milk in the pot and stir.
Then add turkey berry in the pot.
Add yardlong bean in the pot.
Add purple eggplant in the pot, Boil until all the vegetables in the pot are cooked.
Then add the kaffir lime leaves and basil to the pot and stir.
Season with sugar and pork flavour seasoning powder, boil for a while, then turn off the heat.
It's finished, red curry with chicken and mixed vegetables.
The second dish of the meal, Stir-fried water spinach with fermented soybean paste. Of course, the water spinach for this dish was freshly picked from our home garden by my wife. It is water spinach grown in the 10-inch plastic pots.
The ingredients for stir-fried water spinach with fermented soybean paste are as follows :
water spinach
fermented soybean paste
oil
oyster sauce
sugar
water
Put a pan on the stove and heat the oil. Add fermented soybean paste and water, then stir-fry together. Add the water spinach to the pan and stir-fry until cooked. Season with oyster sauce and sugar. Stir briefly, then turn off the heat.
It's finished, stir-fried water spinach with fermented soybean paste.
