Calzone
My #midnightletters tend to be about #midnightsnacks. It's late, about 1:45 AM, and I am awake, so therefore I eat. I made pierogis again as part of dinner after finally publishing a long-overdue post with pictures from a couple weeks ago, but the snack was leftovers from a day ago.
I made calzones with dairy-free cheese substitute, hot Italian sausage, and tomato sauce blended with assorted herbs and spices. I also diced up a tomato that was getting close to over-ripe. It added some authentic fresh flavor. Unfortunately, it also made the sauce too runny. They leaked. It tastes fine anyway.
Do you eat leftovers as a midnight snack? Have you made any meals from scratch due to health concerns or just because it tastes better?
I'm going outside to see whether the aurora borealis is visible. Light pollution has thwarted past events.
