Make "Tape" from Cassava
Greetings everyone,
Cassava maybe familiar with tropical climates such Indonesia, cassava can be made in various types of food. Such as Tape.
Cassava tape is a fermented product of steamed cassava, this traditional food is popular of Java in West Java ,cassava tape is known as Peuyeum(sundanese).
Basically tape is cooked food after going through the steaming or boiling process,the sweet taste of the tape comes from the yeast that breaks down the carbohydrates in cassava into simple sugars.
Apparr from being eaten directly, cassava tape can also be processed into a variety of delicious foods. Ranging from brownis cake,compote,pudding,to a mixture in fruit ice.
In addition, this tape snack also produces a by product in the form of alcohol,alcohol content is only slightly,however,if tape is consumed in large quantities it will certainly effect the health of the body.
That why cassava tape is eaten with reasonable portions,not too much or too little. I make tape by steaming the cassava from the garden. Ingredient for making cassava tape,
- 1 kilogram(1000 grams) of cassava
- 3 tablespoon of tape yeast
- Enough banana leaves.
Step of making tape,
Step 1 cassava peeled, then cut according to taste,after being cut,washed with running water,
Step 2 after washing then prepare a pot for steaming cassava,until cooked.
Step 3 after the cassava is cooked,then wait until it cools down.then prepare the yeast,sprinkle the cassava with yeast until the cassava runs out,then one by one the cassava that has been given yeast.
Step 4 put it in a container that has been lined with banana leaves. Covered with bsnana leaves and then covered with a cloth on top, so that no air enters then put in a place that is not exposed to sunlight.
I do the storage for up to two days, after that the tape is ready to be eaten directly or make various types of cakes and fruit ice mixtures.
