Blackeyed-beans curry and Indian rice bread
.Hello, friends, food lovers, and community members! I made this recipe in Norway before we traveled to India. I’ve been quite busy here, but I have more opportunities for vegan cooking here in India than in Norway. And soon will work on those. However, my hectic schedule has made me a bit lazy. My archive is full of photos, and I’d love to share some good recipes and ideas with you!
Ingredients:
1 cup of blackeye beans
2 onions
1 tomato
4-5 sprigs of coriander
1/2 lime
1 tsp crushed ginger and garlic
1 tbsp tomato puree
1 tsp salt
1/2 tap turmeric
1 green chilli
1 tsp chilli powder
1 tsp coriander powder
1/2 tsp cumin powder
2 pinches of hing asafoetida
1/2 tsp cumin seeds
2 bay leaves
3 cardamoms
2 cm cinnamon bark
2-3 tsp oil
1/4 sour mango
1/4 cup of coconut milk
Wash and soak beans at least 6-7 hours, better whole night.
Cook them, adding 1/2 tsp turmeric and 1/2 tsp salt.
Until they turn softer.
In a warm pan, add oil
Add cumin seeds
After the cumin seeds pop, add bay leaves, cardamom, and cinnamon sticks.
Add hing asafoetida
Add the crushed garlic and ginger, and stir well until aromatic.
Add finely chopped onion.
Stir it well.
Add green chili
Crushed tomato, stir well
Add tomato puree,
Stir well all mixer,
Add all spice powders.
Stir them into the onion-tomato mixture.
Squeeze the 1/2 lime into it. (Instead of lime juice, I used up a bit of sour mango that I found in refrigrator.)
Keep stirring the mixture. Our curry consistency is in progress to avoid burning. Add 2 tbsp of cooked beans' water to the curry, don't mind a few beans falling in. Stir until it releas aroma of spices.
Stir in the beans along with the remaining water, and cook for about 3-4 minutes over medium heat. Add chopped coriander. At this point, you can serve the curry or enhance the flavor by adding coconut milk.
Like I did.
After mix coconut milk, cook for 2 minutes more, and our blackeye beans curry is ready.
Serve with rice or any flatbread; I enjoy it with flat rice bread. To make the flat rice bread, you will need 1 cup of rice flour, 3/4 cup of water, and a pinch of salt.
First, bring the water to a boil, then add the salt and stir in the rice flour. Continuously stir the mixture until it reaches a dough-like consistency. Once it cools down, knead the dough and form it into flat breads.
Take a piece of dough the size of an apple. Dust flour on a clean surface, then press the dough with your palm or fingers to create a round shape. Aim for a thickness of about 2 mm. Place it on a warm pan and sprinkle a few drops of water on the surface.
Flip the side when it cook it will pop up by itself like a balloon.
Enjoy the dinner or lunch, with blackbeans curry and rice rotis.
