Butter chicken
Butter chicken is one of the richest of Indian dishes and the most popular; succulent chicken pieces wrapped in a combination of cream, tomatoes and aromatic spices and dollops of butter.
Served with Butter naans , Roti, Plain Paratha, basmati rice for a simple Indian meal.
*I had 3kg chicken pieces!
Chicken marination:
1 whole lime juice
3 to 4 teaspoon salt
1 teaspoon Kashmiri red chili
3 to 4 teaspoon paprika
1 teaspoon garam masala (adjust to taste)
2 teaspoon kasuri methi (or dried fenugreek leaves)
1/2 teaspoon turmeric
1 teaspoon cumin powder (optional)
1 teaspoon coriander powder (optional)
2 tsp ginger paste (2 cubes)
2 tsp garlic paste (2 cubes)
1/2 cup yoghurt
Mix well and cover. Let the chicken rest in the marinade for a minimum of 1 day in the refrigerator. The longer, the better.
In a pot, add 4 tbsps of oil, some fresh chilli & cumin seeds, and let it fragrant
Then, add chicken, a little water and cook thoroughly.
set aside .
tomato and almond paste:
To a blender, add 1 can of tomatoes and 4 tbsp of almond powder (or cashews)
Blend into a paste
ingredients for buttery gravy:
6-7 tablespoon butter
1 stick cinnamon
3 green cardamoms
2 Cloves
1 tsp cumin seeds
1 cube ginger
1 cube garlic
3 to 4 green / red chillies (deseed or slit)
1 to 2 teaspoon paprika (adjust to suit your taste and colour)
Salt to taste
1½ to 2 teaspoon garam masala (adjust to taste)
1 teaspoon cumin powder (optional)
1 teaspoon coriander powder (optional)
1 teaspoon kasuri methi crushed
Heat the butter in a pan & add cinnamon, cloves & cardamoms. When sizzling, add cumin seeds, ginger, garlic cubes & green chillies. Fry on medium heat for 1-2 mins; till the raw smell goes away.
Turn off the heat. Stir in the red chilli powder, garam masala, cumin powder, coriander powder and kasuri methi
Add your tomato/almond paste & some water
Cover partially and let boil on a medium heat, stirring often, until thick. This takes about 10/ 15 mins, depending on your heat & cookware.
Add it to your chicken
Mix well.
Pour ½ cup hot water (if the sauce is too thick) and simmer for a few minutes.
Finally, add ur preferred amount of double cream
Garnish and serve
