Vatapá para Acarajé e Abará

Vatapá is a sumptuous Afro-Brazilian dish that's integral to the culinary tradition of Bahia, Brazil. Traditionally served as a filling for Acarajé and Abará, this version utilizes wheat flour for an economical twist without sacrificing the rich, savory flavor. Ingredients

🥜 100g Whole Roasted Cashew Nuts
🥜 100g Whole Roasted Peanuts
🦐 100g Dried Shrimp heads on, mixed smoked and natural
🧅 2 Medium to Large Onions, peeled
🌾 200g Wheat Flour All-purpose
💧 500ml Water
🥥 200ml Coconut Milk Brand: Sococo
🌿 1/4 to 1/2 cup Coriander Leaves
🌿 Small piece of Ginger ~1 inch
🌶️ 10 Small Aromatic Peppers Pimenta de Cheiro
🟠 2 tablespoons Palm Oil Azeite de Dendê, Brand: Fazenda


Instructions

1- Prepare Ingredients:

  • Peel and coarsely chop the onions.
  • Remove the stems from the coriander, using only the leaves.

2- Blend Ingredients:

  • In your blender, add the onions, water, aromatic peppers, ginger, dried shrimp, cashew nuts, peanuts, wheat flour, and coconut milk.
  • Blend until smooth, keeping in mind personal texture preference.

3- Transfer to Pot:

  • Pour the blended mixture into a stainless steel pot.

4- Initial Cooking:

  • Place the pot on the Atlas glass-top cooktop over low heat.

5- Stir and Thicken:

  • Use a wooden spoon or spatula to stir continuously.
  • Ensure the mixture does not stick to the pan.

6- Adjust Seasoning:

  • Taste early and adjust seasoning as desired for salt, ginger, and pepper heat.

7- Cook to Consistency:

  • Cook until the mixture has thickened and begins to detach from the pan.
  • This indicates the right texture.

8- Incorporate Palm Oil:

  • Add the palm oil and stir until fully combined.
  • Ensure the vatapá achieves a vibrant and smooth texture.

9- Finish:

  • Once ready, remove from heat and serve.
