Roasted salmon and sweet potato puree

That night we took advantage of a salmon price promotion to test a new recipe.

It is a fillet roasted with common seasonings, but highlighted by thyme, rosemary and lemon.

With sweet potatoes we make a puree that will balance the acidity of the lemon and the unmistakable flavor of the salmon.

Accompanies a Chilean wine, Tierra del fuego, red carmenérè, which is also part of the low-cost wine quota. Here in this region we have access to many good quality wines at affordable prices. Argentina and Chile are highlights!

The last detail are the porcelain plates, purchased directly from the factory in a selection of items that did not pass quality control for export.

Trata-se de um filé assado com temperos comuns, mas em destaque citamos tomilho, alecrim e limão siciliano.
