Ingredients
🥔 3 large potatoes
🌿 1 bunch asparagus
🥩 4 Angus Strip Steaks
🌱 Weber Steak ‘n Chop seasoning (to taste)
🍃 Italian seasoning (to taste)
🌶️ Black pepper (to taste)
🫒 Olive oil (about 3 tablespoons, divided)
🧅 Onion powder (to taste)
🧄 Garlic powder (to taste)
Instructions
1- Prep the Ingredients:
- Peel and cut the potatoes into chunks.
- Trim the tough ends off the asparagus.
- Pat the steaks dry with paper towels and season generously with Weber Steak ‘n Chop seasoning, Italian seasoning, and black pepper.
2- Cook the Potatoes:
- Place the potato chunks in a large pot of lightly salted water. Bring to a boil over medium-high heat. Cook until tender, about 15-20 minutes. Drain and set aside.
3- Cook the Asparagus:
- Heat 1 tablespoon of olive oil in a large pan over medium heat.
- Add the asparagus and sauté for 7-10 minutes. Season with a pinch of onion powder and garlic powder. Cook until asparagus is bright green and tender-crisp.
4- Cook the Steaks:
- In a separate pan, heat 1-2 tablespoons of olive oil over medium-high heat until simmering.
- Add the steaks to the pan, cooking for 3-4 minutes on each side for medium-rare, or adjust to your preferred doneness. Let them rest for a few minutes once done.
5- Prepare the Mashed Potatoes:
- Mash the cooked potatoes, adding in butter, milk, salt, and pepper to create a creamy consistency. Adjust seasoning as needed.
6- Plate the Dish:
- Start with a generous scoop of mashed potatoes.
- Lay the asparagus alongside.
- Slice the rested steaks into thin slices and place them neatly on top of the mashed potatoes.
