Chicken Fried Rice

Ingredients

🐓 2 cups diced chicken breast
🌽 2 tablespoons canola oil
🍚 4 cups cooked rice
🧄 3 cloves garlic, minced
🧅 1 medium onion, chopped
🥕 1 cup frozen peas and carrots
🥚 2 eggs, beaten
🧂 1 teaspoon salt
🌶 1/2 teaspoon black pepper
🌿 1 tablespoon King Greg’s Spicy Italian blend
🔥 1 tablespoon Tony Chachere's Creole seasoning


Instructions

1- Preparation:

  • Begin by cutting the chicken breast into small, bite-sized pieces.

2- Cooking the Chicken:

  • Heat a large skillet over medium-high heat and add 1 tablespoon of canola oil.
  • Add the chicken pieces into the skillet.
  • Season the chicken with King Greg’s Spicy Italian blend and Tony Chachere's Creole seasoning.
  • Sauté the chicken until fully cooked and lightly browned. This should take about 5-7 minutes. Remove the chicken from the skillet and set aside.

3- Preparing the Fried Rice:

  • Add the remaining tablespoon of canola oil to the skillet.
  • Stir in the garlic and onion, cooking until the onion is translucent, about 2 minutes.
  • Add the cooked rice, mixing well to coat the rice with the oil, garlic, and onion.
  • Incorporate the frozen peas and carrots and cook for another 3-4 minutes.

4- Finishing Touches:

  • Create a well in the center of the rice mixture and pour in the beaten eggs.
  • Allow the eggs to cook slightly, then mix into the rice.
  • Season the mixture with salt and black pepper, stirring to evenly distribute.

5- Combining and Serving:

  • Return the cooked chicken to the skillet, mixing everything thoroughly.
  • Ensure the ingredients are well combined and heat through for another 2 minutes.
  • Serve hot, garnished with additional spicy Italian seasoning or fresh herbs if desired.
