Quarantine Kitchen: Homemade Taralli

This weeks are so sad but we must try to concentrate our positive energies in creativity and try something that until a few weeks ago we would never have done. I, always assisted by my wife, are spending a lot of time dedicating ourselves to home-made food, what normally includes in supermarkets or bakeries.

Today we prepared the taralli!

The recipe is very simple, a little more demanding than practice.

Ingredients (about 60 taralli):

  • 350 grams of flour
  • 10 grams of sale
  • 120 grams of olive oil
  • 200 grams of white wine

Start!

In a glass container we add the flour, the sale and we begin to knead with our hands, until we mix the dough which will be dry.

Now we add the wine at a time and we work a lot with our hands, refining the dough both homogeneous and soft. You have to roll the dough and then work it again. This for at least ten minutes.

Now let stand 10 minutes.

We take small pieces of pasta and work them with the palms of our hands until we obtain strips about 10 cm long and 1 cm in diameter, we take the flaps and join them in a tarallo shape. Let's proceed with this technique with all the taralli.

We take a pot with water and bring a boil. We dip the taralli for a few minutes and we will see them rise to the surface; this is the time to remove and place them on a cloth to dry for a few minutes.

We turn on the static oven at 190 ° C, move our taralli on a baking tray with parchment paper and bake them for about 45 minutes.
