A Fiery Lamb Scramble
I was in my favorite deli when I spied a new product: ghost pepper cheddar cheese. My daughter loves, loves, loves spicy things, and I was intrigued with the idea of incorporating it into a sandwich or such, so I bought two slices to take home.
I hadn't tried it yet when she stopped by, so I offered her a taste that she readily accepted. There was an initial reaction of pleasure to the flavor contrast of peppers and cheese, which gave way a concerned look. Then, a gasp.
"Oh, my goodness!" she said. "The heat doesn't let up!" I chuckled, noting that I hadn't tried it yet. She immediately handed me a piece the size of a postage stamp, which I popped it into my mouth. There was an initial sensation of creamy shes with the acknowledgment of the peppers. Then I began chewing.
That's when it happened! The heat level rose and rose, and didn't let. It wasn't enough to bring tears to my eyes, but certainly came close.
"Wow!" I exclaimed. This packed a punch!"
Which led me to this morning, and breakfast. I diced up some leftover lamb to sauté in a touch of canola oil and butter. Next was a sprinkling of herbs and two scrambled eggs, topped with a small amount of the cheese. Some simple stirs brought it all together.
I scooped up as small amount. The result was perfect! Fluffy egg, mixed with seasoned lamb. and a hint of creaminess from the cheese. The ghost pepper heat began to build in the background, but didn't overwhelm as it faded into the other flavors.
I still have a slice of the cheese left to play with, thinking that I'll try it in an earthy-flavored risotto. I'll let you know how that turns out.
