Coconut Omelette With Soybean Sprouts

There are many variations of omelets for breakfast. Indeed, for me, omelets are very practical for breakfast.

And of course, they're also great for dieting because they're filling and high in protein.

You know what? I miss my mother's cooking. Since my mother passed away a long time ago, I can only create memories through cooking. So, one of those dishes is a coconut omelet.

Back then, my late mother made egg omelets mixed with grated coconut. So we could fill up and have enough to share between me and my siblings.

Back then, we had coconut trees, so we had plenty of coconuts to use as a food source.



Well, today I'm making a similar dish. I'm modifying it with the ingredients I have at home today.

I have soybean sprouts. Soybean sprouts don't need to be cooked very long. So, I'm going to add soybean sprouts to the coconut omelet.


The Ingredients

  • 4 eggs
  • 100 grams of grated coconut
  • 100 grams of soybean sprouts
  • 1 spring onion
  • 1 stalk of celery
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of coriander powder
  • 1/2 teaspoon of salt
  • a little vegetable oil
  • optional: a few tablespoons of chili sauce



Cooking Instructions

Prepare a bowl. Beat the eggs with the turmeric powder, coriander powder, and salt. Mix well.

After the eggs are beaten, pour the beaten egg mixture into the grated coconut. Mix well.

Add the diced spring onion, celery pieces, and soybean sprouts.

Prepare a non-stick pan. I usually let the pan heat up briefly over low heat. Then, once hot, I add a little oil. Add the egg and coconut mixture.

Cook for just 2-3 minutes. I used a lid so the top of the omelet would cook evenly.

This takes skill, flipping the omelet. Ehehe. Luckily, I managed to flip it. Although a little late, it almost burned 🤣

After flipping it, I really checked the clock. Just two minutes to make sure it didn't burn.

Tadaaa, it's simple, but honestly, it's delicious. The turmeric powder also adds a beautiful color to the final dish.

I split it in two. It's really filling. And it satisfies my longing for my late mom.
