Delicious chicken and beef empanadas
Venezuelan empanadas are delicious—they’re half-moon-shaped pastries made from fried corn flour and filled with whatever you like: cheese, ham, chicken, beef, sausage, and even fish. Everyone has their own way of making them; some make them savory, while others prefer a touch of sweetness (like me). They’re typically eaten for breakfast but also work well for dinner. You can serve them with sauces, which makes them taste even better. Well, here’s how I make my empanadas.
Proceso/Process
Venezuela’s favorite flour is PAN flour; even if I try other flours, this one always beats them all, and it’s perfect for making empanadas. I use PAN flour along with a little wheat flour to make the dough soft and ensure the empanadas are crispy on the outside and soft on the inside. I add two tablespoons of sugar and half a tablespoon of salt to my mixture. Sweet empanadas have a more intense flavor—they really do taste divine.
I start adding water to the mixture and knead it until I have a workable dough, but without adding too much water, since we want a slightly firm dough that can hold the empanada filling without breaking when it’s fried. Then I took a plastic bag and cut it open, placed it on my wooden cutting board, added a little oil mixed with water, then placed the ball of dough on top and rolled it out using the bag itself. I like my empanadas to be very thin, so I rolled it out quite a bit.
Next, we place the filling in the center—this time I made my stewed chicken and ground beef empanadas. Then we fold them over and cut them using a container like the one in the photo, creating the perfect half-moon shape.
In a skillet with enough oil, fry the empanadas until they're golden brown, then serve.
They turned out really good and thin, which makes the filling much more enjoyable than when the dough is thick. Plus, empanadas are super versatile—you can fill them with whatever you want and pair them with whatever you like, including hot or cold drinks; both are excellent choices for empanadas.
